
Beet Hummus
Ingredients
- 2 cups chunks of beets
 - olive oil
 - salt
 - 1/4 cup tahini sauce
 - 1/2 lemon, juiced
 - 1 – 3 garlic cloves
 - 1/2 tsp. salt
 - pepper
 
Roast the chunks of beets with olive oil and salt until tender. Put the roasted beets in a blender or food processor. Add tahini sauce, lemon juice, garlic, salt and pepper. Blend or process until smooth. Add small amounts of ice water until desired consistency.
